Home Cooked and Ready to Eat! ~ WIAW

Hey there! Can you believe it’s already Wednesday?! This week is flying by, but I’m not complaining. (A day closer to the weekend makes this girl pretty happy! 🙂 ) This week has been filled with delicious hearty family meals. Enough jibber jabber, let’s dive right in!

One of my favorite family meals (before we moved) was make your own burrito Saturday dinner night! Every night, unless something else came up, my family would join together at the table and fiesta right in to the burrito making! (Did that make sense? Let’s just go with it.. 😉 ) Here we have a low carb high fibre tortilla topped with spinach, 97/3 lean ground beef with taco seasoning, onions, and tomatoes. So fresh and flavorable! I also had a side of tuna for extra protein, but that isn’t so exciting. I can’t deny it, this girl loves her Mexican food! 



I love, and I mean love, broiled sweet potato. I know a lot of people prefer the wedges/fries, but I love how, when in big chunks, the sweet potato gets soft and absorbs all of the seasoning flavors. Here we have grilled chicken seasoned with Mrs. Dash, broiled sweet potato, and steamed broccoli. This girl loves her veggies (and in big portions, too!).




Oh, hey there broiled sweet potato. Fancy seeing you again. 😉 This Sunday I surprised my family with making a hearty Sunday family dinner. While they were off doing their thang, I was in the kitchen. Cooking in theraputic and really keeps me at ease. I made roasted pork (98% fat free!), broiled sweet potato, cabbage, and cauliflower. All I can say is.. yum. My family really appreciated the nice comfort meal. 🙂



I don’t seem to function right if I don’t have my oatmeal and coffee in the morning.. It just throws me off. Anyone else like this? Here, I started my morning with oatmeal mixed with cinnamon, almond milk, and fat free cottage cheese (try this!) and then topped it with strawberries, defrosted blueberries, and almonds! I also had a side of egg whites topped with salsa and Peppermint Mocha coffee. Simple bliss.



Op! There you are again sweet potato. What can I say? I’m a repeat offender. In my defense, they are delicious! Here we have hake loin seasoned with Mrs. Dash, broiled sweet potato, and egg whites topped with steamed broccoli. This meal is somewhat coherent? It was mighty delicious! Anyone else like hake loin? It isn’t very common here.




Aaaaaaaaaand, that’s a wrap! (Haha, get it? A pun to my burrito picture.. Anyone? No? Okay.. :p )

  1. Oh I love that idea of make your own burrito! We used to do that all the time at home and would have taco nights but it’s been ages since we’ve had a family dinner. Maybe because we all live in different parts of the country 🙂
