Currently – April 2014

Happy April!

I can’t believe that we are already 1/4 of the way done with 2014. That blows my mind. Seriously.. it seems as if New Years was just yesterday! So far, this year has been filled with some pretty crazy events, experiences, and overall feelings. I have kept my head up and staying positive. I am ready to bring on April with a positive and optimistic attitude. I can’t wait to see what this month has in store for me. 🙂

I haven’t gotten the chance to start it yet, but I am going to start tonight. I love starting a new book at the beginning of each other. This one has been on my little library shelf for quite some time now. I think it’s time to crack it open and dive into a new story. 🙂

Current Guilty Pleasure: Going out with friends to meet new people and try out new things.

Current Nail Color: I actually have my nails painted this month. I wanted to come in with a subtle spring color, and the first color that came to mind was purple. Of course. Purple is my favorite color, so I love loving down at my nails and seeing a pop of color. 

Current Drink: This may come as a surprise to you, but Diet Snapple Peach Diet. Shocker, right? 😉

Current Food: I have been all about oatmeal for breakfast, snack plates for lunch, and quesadillas for dinner! They’re so dang good! Oh come on, you can’t deny that oozing cheese. 😉




Current Wish List: Leggings, new clothes, chocolate (Yes, chocolate. Resses to be exact.), a massage, a new phone.

Current Needs: I need sleep, leggings, clothes that will fit me (all of them growing to be too big), and some self motivation to help push me through this last hectic quarter of school.

Current Bane of My Existence: All of these projects for school that are compiling up!

Current Indulgence: Taking a lot of time for “me.” I know we should all do that anyways, but with school starting back up, I need more time for me (to stay sane). I have taken up a lot of stretching and yoga, along with Netflix nights, spending more time with family and friends, and just taking in those moments to breathe.

Current Triumphs: Conquering “fear foods” such as Domino’s pizza, thin mint ice cream, gooey cheesy barley, and other delectable goods. I know it may not be the best for me, but knowing I conquered them is pretty damn satisfying. 

Current Blessing: Although I am facing quite a few health issues, I am blessed for the recovery I am taking in order for my body to recovery. Back in the day, I used to flip out if I rested too much. Now, I am enjoying it, because it is helping me mentally with balance and physically with obvious reasons. 🙂

Current Outfit: I’m rockin’ the dark colors right now (unintentionally) while it’s pretty hot outside. Go figure. *eye rolling emoji* I am wearing black basketball shorts (at least I’m wearing shorts, right?) because they are better than jeans and pretty darn comfortable and a dark grey v-neck.

Current Excitement(s): Knowing I have less than two months left of school, moving to my new house soon, becoming more confident and a social butterfly, making new friends, and overall living the life I am living.

Current Mood: Pure and utter bliss.

Let’s Chat Over Some Coffee


Good morning, you guys. I just want to sit down here this morning and have a talk with you. I have my oatmeal, my coffee, and an open mind for this post. I don’t know about you, but I love having catch up talks over some coffee.. Well, I’ll be the one doing the talking, but we can gladly get one going in the comments. 🙂

Alrighty, first off.. I don’t know about you guys, but I cannot start my morning without some oatmeal and coffee (well besides drinking water upon rising). My days always feel incomplete without it. Ya know what I mean? Even with the warmer weather, I still love having my oats warm. Maybe it’s the fact I haven’t tried overnight oats, but I digress.


*I feel like I’m the only one who mixes in my nut butter with my oatmeal besides saving it for last.*



I seriously cannot believe that it is the last day of March. Is it just me or is 2014 going by beyond fast? We are already about to head into the fourth month! Ahh, it’s crazy to realize that we are already 1/4 of the way through the year. That blows my mind. I think that’s a bit too much to comprehend while only having a few sips of coffee. Whew, I feel like today is going to be a whirlwind of a day already.


As I already clued in on yesterday, I got to experience something new this weekend. I went to my first quince. I was invited last minute by my friend to go to their friend’s sister’s party. I’m talking about an hour before pick-up notice. I was running around trying to find a dress and get ready. It was a little awkward considering I didn’t know anyone, but I made the most of the night. Right as we got there, I met the princess of the night, got assisted to our seats, and was given food. Good thing because I was HUNGRY. We had rice, beans, pork, tortillas, and veggies. It was pretty tasty. We enjoyed apple cider throughout the night. We also watched the court dance to some songs. I’m not gonna lie, I started tearing up at the slow songs. It was so beautiful seeing her dance with her dad and given her new shoes to symbolize her becoming a woman. Even though I was the only white girl there, you bet your butt I was dancing along to the music even though I didn’t understand it. They all welcomed me with open arms, though. 🙂



On Saturday, we started moving some furniture into the new house. I still can’t believe how beautiful and spacious the house is. In some of the rooms, we are going to add some wood flooring. We didn’t move much, but I did help my dad do a good portion of the yard work that needed to be done. No surprise that I got sun burned. I’m happy that I’ll be receiving a vanity and a new bed post when the flooring is finished and we clear out the house we’re in right now. I’ve already started packing and my room is becoming more and more bare.

Sadly, I finished watching all of the episodes of That 70s Show, so now I don’t know what to watch on Netflix.. Any suggestions would be much appreciated. 😀


*Oh no.. my coffee is almost gone.*


Besides those two major events, I didn’t have much going on this weekend. I got stood up, but I won’t get into that. We gotta stay positive!


I know what I was going to say now.. Due to some internal issues (I’d rather not go into detail), I have been advised to not partake in physical activity until my body starts to function normally. The most physical activity I get is walking around. I have been doing a lot of stretching, because this girl cannot stay still for so long. I just get so antsy! o.o


*Oh no.. my oatmeal is coming to an end..*


What I have decided is that once I get the okay, I want to start training to compete in a powerlifting meet and compete in bikini figure. I know it will take a lot of work, but honestly, I really want to do it. I am determined to do it. I’m not going to do some crazy diet and wear myself out, so I will probably do it in a year or two. I don’t want to damage my body even further. No way, Jose.

Well, my bowl is empty and my coffee is finished. This was a nice chat. We should have it again sometime soon. 🙂

Let’s Talk Linner

Hey hey! I can’t believe this weekend is almost over. It whipped by too fast in my opinion. Although there were some failure of plans, I got to experience something new and start working on the new house. I’ll go more into that tomorrow. Today, the topic is all about lunch and dinner provided by the great and wonderful Arman. Oh how I enjoy talking about food (if you haven’t already noticed..). 😀


But first, let me take a #selfie.

1. What is your typical ‘go to’ lunch?

 -Loaded snack plates. I can never really figure out what to have for lunch. I personally find it an awkward meal. I mean, I used to love the pb&j’s with a juice, chips, and a piece of fruit. I then transitioned to a second breakfast. Now, I have moved onto snack plates when I’m home and fruit bowls when I am at school. Can anyone help a girl out with good lunch ideas?

2. What is your typical ‘go to’ dinner?

 -A source of meat, sweet potato (obviously), and some more vegetables. I have been having a good amount of pasta lately, though.

3. What is the best lunch/dinner you have eaten out?

 -A Grilled Chicken Club from BJ’s. It had tender marinated chicken breast, grilled and topped with bacon, avocado, melted Swiss cheese, lettuce, tomato and roasted garlic mayonnaise on grilled sourdough bread. FLIPPIN’ DELICIOUS. In-N-Out has a special place in my heart.. so does Pho.. I’m a really indecisive person.

4. What is the best lunch/dinner you have eaten recently?

 -I don’t eat out often, but my mom did bring me Chicken & Shrimp Pho to cheer me up. I am a sucker for Pho. I have been craving In-N-Out, Buffalo Wild Wings/Wingstop, and all these other places lately. What’s going on here?!

5. You are HANGRY. What would you make in little time?

-Although this is a lunch and dinner post, I would have to say breakfast. I LOVE BREAKFAST. Seriously, pancakes/waffles/eggs/breakfast sandwich/oatmeal/potato hashes/french toast.. I mean COME ON. There are so many delicious options. You can’t say you wouldn’t like that. 😉

6. If you had friends over for dinner, what would you make for them?

-I would make a big ‘ol dinner filled with so many different components. I think I would make a multi-cultural dinner with a bunch of different dishes. I would put it out a variety of different options so they could all try out new things. I wanna surprise their taste buds. 😀

What Makes You Happy?

Hey there! It’s finally Thursday! 😀 This week has been inching along slowly. I think it’s the effect of transitioning from break back to school. Oh how I am counting the days until Summer. 42 to be exact. I guess you can say I’m excited. Today, I am linking up with my fellow Carb Queen, Amanda, to share what’s been going on in this girl’s mind.



1. I want to start off by thanking you guys for your sweet comments on yesterday’s post. I just don’t know what it is, but I have just been looking big. I look in the mirror and just sigh. I think my mind is acting like this is because of the recent put on of stress. School started up again and so did the work load. I know these thoughts are just playing tricks on my mind, but it just gets to me sometimes. Ya know? Instead of dwelling on it, I do take action. Instead of focusing on le “problem areas,” I shift my focus towards what makes me happy. Smiling actual does put me in a better mood. Also, Happy never seems to fail to make me smile. I mean come on, who wouldn’t be happy while listening to it? 😉


2. I have heard the song #Selfie one time too many. I hear it EVERYWHERE; on the radio, on the tv, at school, in the store. It’s everywhere! It’s like the new version of Call Me Maybe. Amiright? On the upside of this, I love the beat that goes along with it. Another up? It will be a great resource to look back on to the study the culture of 2014.



3. The weather has been so bipolar in Arizona lately. The mornings are cold, the afternoons are a heat wave, the evenings are a tones down heat wave. I kid you not, I have the most epic tan lines from my shirts, shorts, and shoes. Hello tan on the outside, yet pale as a ghost on the inside. -____-  We did have a rare occasion of a marvelous windy day. It weather was perfection. Fingers crossed that happens again soon!


4. In art class, we are now making masks. The word excited cannot even sum up to my joy. If you didn’t know already, I have a really big creative side to me. I love to draw, paint, sculpt.. you name it! I have this really feminine Mardi Gras theme going on. I was originally going to do a Day of the Dead mask, but I decided to shift to a more creative route. I’ve finished up the sketching and forming the mold of the mask. Now, I have to cute out the extensions and plaster, connect them, and then paint. I can’t wait to see how it comes out!


5. I don’t know if I have mentioned this before, but I have recently been doing yoga at home. I have been going on Youtube and finding different videos to try out. I’m surprised on how flexible I actually am. I didn’t realize how difficult some of the moves were though.. A lot of wobbling, a lot off off key breaths, a lot of “How the heck am I going to do that?!” kinda talk. You get the picture. I love how it challenges my body and how relaxed and happy I feel afterwards. It really does bring me to a state of peacefulness. After the move, I am hoping to join in on some group classes. I would love that! I really want to try hot yoga like I’ve been hearing about from Heather.


6. On Tuesday night, I had a breakdown. I had a breakdown for so many reasons.. stress, moving, college, my health, the bad news, feeling lost, just everything. It was then and there that I had about a 30 minute talk with God. I was so lost and I actually felt like something was weighing down my heart. I let everything out. In the best words I can, I have the describe the feeling as feeling free. I felt like the chains on my heart were unlocked and I could breathe properly again. I felt as if he was there with me letting me know that everything is alright and that there is a plan for me. I am so caught up in all of the stresses that I just need to work on myself more dominatly. I always push on the stresses first and forget to really think about myself. That needs to change, PRONTO.


7. I decided that I am going to get a tattoo of a Bible scripture. I am going to look more into it. I want it to be the perfect one. I also want one that symbolizes my strength through all I have been through and overcome. They are meaningful to me, so I know that they will be worth it.


8. This week at school, they have been really focusing on issues in the world that needs more attention; eating disorders, abuse, cancer, etc. Tomorrow, they are having a lighting ceremony with candles and lanterns in recognition of the ones who have faced it. I was surprised to hear that a few of my friends actually wrote my name down for some candles. I have faced two of the issues above. I faced both the eating disorder and self-abuse. I won’t go into detail about that, but it both gave me a feeling of anxiety yet appreciation for that. I can’t wait to go to the event.


9. I really want to know, what makes you happy? I really want to get to know the people that read my blog. I appreciate all of you that do. I really do. I want to talk with you, get to know you, and become good friends.

Ignoring the Thoughts and Eating (WIAW)

You guys, I think Wednesday’s are coming in a close second with Friday on becoming my favorite week day. I get to sleep in an extra hour, have shortened class periods, drool over some fabulous food. 😉 Ahh, I remember the days when it was not always like this, but I am sure glad they are like this now!


I’m not going to lie, I have been having a pretty crappy body image lately. I don’t know what it is.. but I just feel so big even though my close fit a little loose. I go through about five outfit changes in the morning until I find something I think fits decent. It fades in and out. I don’t know.. maybe I’m just weird or something. I’m stronger than the thoughts though.


Anywho, enough talking.. just enjoy the food. 🙂

Chicken and Shrimp Pho.


Warm Apple Pie Oatmeal topped with peanut butter and a side of coffee.


A fat-free cream cheese + spinach + turkey + avocado + tomato wrap, strawberries, blueberries, and almonds.


Pork roast, spaghetti squash, and mashed sweet potato.


Vanilla caramel melted banana egg white oats with fat-free cottage cheese, chia seeds, blueberries, strawberries, and topped with peanut butter with a side of water and coffee.


Rotisserie chicken, garlic potatoes, broccoli, and french bread.


A wrap (like the one above), almonds, apple slices, grapes, carrots, pineapple, and watermelon.


A turkey burger topped with spinach + tomato + onion, quinoa, and cauliflower.


Baked chicken, roasted sweet potato, broccoli, cauliflower, and corn.



A chicken + cheese + mushroom + onion + red pepper quesadilla, chicken, and broccoli.

Going Out of My Comfort Zone

Yesterday marked the end to my Spring Break, but today marks the day of a whole new week. Granted, I wouldn’t mind having another week off (I mean who wouldn’t? 😉 ), but I am ready to get back into the groove of things. I guess it can’t be that bad since I only have 9 weeks left. That is even counting this week! Woo hoo! I have to say, I am really happy with my Spring Break. I ventured out and started being a social butterfly. Who would’ve thought?

Marvelous was.. finding out that the sale of the house was finalized and that I am already starting to pack. It’s official you guys. I will be moving (slowly but surely) starting next weekend. It’s sad to see my room slowly getting emptier and emptier, but I am glad to be moving to a new area. Don’t get me wrong, I like the area I am in now, but I am ready for a new adventures. Plus, the new house isn’t so bad. 😉

Marvelous was.. seeing Need For Speed over break. I don’t know what it is, but I have always been a fan of watching races. Maybe it’s the adrenaline rush? Maybe it’s the competition? Maybe it’s the heart stopping intensity? Maybe it’s seeing the happiness of the winner? I don’t know what it is, but I really like it. I have to say, it doesn’t top my love for Fast & Furious. I mean come on now.

Marvelous was.. reading Divergent. In one day. I read it in less than 5 hours. That is really telling you something. It sucked me in right from the beginning. I promised myself that I would read the book before seeing the movie. It’s safe to say that I will be more than likely seeing the movie next weekend. I have heard some good reviews so I am pretty happy about that. I can’t wait to read the rest of the  series. I have a pretty strong feeling that it will be just as good.

Marvelous was.. getting in a really (and I mean REALLY) good lower body workout. I love training my lower body more than anything. It is much stronger than my upper body. My calves are still sore. o.o

Marvelous was.. Spending a good amount of my time Snapchatting people. Nobody told me it would be that fun. I guess you could say my dislike for taking pictures is slowly fading. 😉

Marvelous was.. being able to share the “Carb Queen” title with the lovely Amanda and Heather. 🙂

Marvelous was.. sleeping over at my best friends house. Lately, we have been hanging out more often and I am really enjoying it! We playing Mario Kart Racing, Mario Party 9, watched Veronica Mars, ate some pizza, tried out a new-to-us restaurant called BJs and had an amazing sandwich that had toast rye bread + melted cheese + grilled chicken + lettuce + bacon + avocado + tomato + a chipotle sauce. My mouth was in heaven!

Marvelous was.. knocking out homework for a class for the rest of the year. Let’s just say a huge weight has been lifted off my shoulders. 😀

Call Me The Carb Queen

First off, I want to thank you all so much for the kind words on Thursday. It really means a lot to me. I can’t say that things are getting better, but I am having a positive outlook on the situation and not letting it effect my happiness. You guys are amazing.

*Transition* I am especially excited about today’s Spill It Sunday, because I am the carb queen. 😉 I used to shy away from this delicious macro, but now I can’t get enough of it. I have really grown on how much I eat and the balance I have found with food. You can always find a carb source with my meals. Enough jibber jabber.. onto the questions! 😀

1. What is your all time favourite carbohydrate based food/dish?

-Oatmeal, oatmeal, oatmeal. I have to have it every morning. If I don’t, then my day does not feel complete. You get me? I have grown a strong love for oatmeal. Especially when it is topped with oatmeal.. OH MY GOSH. My mouth is in heaven. You can add fruit to it, nuts, nut butter, veggies, eggs; a lot of things. Come on, it’s like a super food that’s beyond delicious. 😉

2. What is your favourite fruit? 

-I had a hard time deciding on this one.. I love the sweetness from bananas but my stomach cannot digest them well, I love strawberries (considering they are natures candy), I love the juiciness of watermelon, but my heart goes out to apples. I put apples in my oatmeal, dip the in peanut butter, have them in pie. The list just goes on and on.

3. What is your favourite grain?

-This may come as a shocker but oats. I know.. I know.. contain the shock. 😉 I love oats because they are so versatile with oatmeal, pancakes, cookies, etc. You cannot go wrong with oats. 🙂


4. What is your favourite starchy vegetable?

-This also may come as a huge shocker.. sweet potatoes. You know you cannot get enough of them when I highlight my weekly eats. They’re so sweet.. so delicious.. Oh boy, now I want some.


5. Which carb receives unfair flack? Which carb is most overrated?

-I would have to say white bread, white flour, and white rice. Granted they don’t provide as many nutrients as whole wheat or brown rice, but they are a good carb source. They have become a real fear to the diet world. They are okay to eat. No food is forbidden. If you like it, eat it. I enjoy a good piece of french bread.

-Most overrated carb? Brown rice. Yes.. yes.. I do like it, but I mean it is kinda bland unless you add flavor to it. It provides a lot of nutrients, but it is really bland..

7. What is YOUR perception of this macronutrient?

-I LOVE CARBS. I used to shy away from them in the beginning of my eating disorders. I was brainwashed into thinking they would make me fat. That was a no no. Over time, I learned the benefits of carbs and all of their glory. Energy.. taste.. fulfillment. They are just a great macro that I cannot get enough of. Like I said above, you can find a carb source in every meal and snack I eat. I am so happy I got over that “fear.” Amiright?

8. What benefits do CARBS play in YOUR personal eating habits?
